Easy Mini Summer Fruit Tarts





1 box Miss Jones Confetti Pop Cookie Mix
1 egg
6 tablespoons softened butter
1/4 cup heavy whipping cream
6 oz softened cream cheese
1/2 tsp vanilla
1/3 cup + 3 tablespoons powdered sugar
1 tablespoon lemon juice
3 tablespoons powdered sugar
Preheat the oven to 350 degrees.
Make cookie mix as directed. Scoop 3 tablespoons of cookie dough into each mini tart pan. Using your hands smooth and flatten dough, making sure to come up the sides. Poke the bottom with a fork 3 times. Bake at 350 degrees for 11-12 min. Let cool.
In an electric mixer, using the whisk attachment, beat heavy cream until whipped. Set aside in a separate bowl.
In the same mixer, beat the cream cheese, powdered sugar and vanilla until smooth, about a minute. Fold in the whipped cream until filling is smooth and creamy.
In a small bowl, using a whisk, mix the lemon juice and powdered sugar until smooth.
Fill each tart with a heaping tablespoon of filling. Smooth.
Top with any fresh fruit you desire. Finish with a teaspoon of lemon glaze. Enjoy!
